A New Year for Meals with Morri: Catching Up and Moving Forward

A New Year. I can hardly begin to describe how weird it is to be back in the States. The last months in Malta were quiet ones, and although despite learning how difficult it is to live on your own an ocean away took up the majority of my cognitive ability, I feel better for having had the experience.

With turning twenty-five, I came to love myself. I learned to not only honor my body, but pride in its capability of making life one hell of a ride. I also learned what I was capable of, meeting a group of amazingly compassionate people (they know who they are) during my stay, and am looking forward to see what a Master's in CAR and a year abroad in Malta will take me.

And coming back to the States, I was embraced by family, met online friends in person, and became even closer to a group of friends CK and I are part of and lovingly call the Wingmates.

At the end of 2014, CK and I shared our second anniversary.

But I also learned very hard lessons of being an adult: it isn’t about making money; it’s about making meaning. I had to learn to live with myself, to self-soothe the growing anxiety and panic of what was going to happen after I graduated, after I left Malta, after my three months in Italy come February. I learned to stick up for myself and bring my passions forward. I learned that being an adult is not seeing the world as black and white, good and bad, gluten free and death by gluten. I learned that being an adult is making change where there is injustice, and dreaming things real.

So here I am, having almost been three months silent, with a book review to make happen (this week, I swear!) and a few recipes behind. Each year I keep making the promise that I’ll be more productive on here, and every time I wish I had the time and the energy to produce the number of posts as I had done back in 2011. But graduate school and living in Malta were more important, because I could see tangible results in my work and they were crucial to my development and future. And sure, I have had wonderful opportunities to do reviews in the past, but it feels like I’m not as connected to readers as I would like, nor do I have a focus beyond hoping people will try my recipes and let me know how it worked out. There are plenty of people blogging about healthy living already, and so the struggle of keeping things new and original can be hard sometimes.

But being me has been interesting thus far, and when I am able, I will tell you all about my plans for 2015. So for now I'm just going to wing it. I'll post when I have stories and recipes to share. But in the meantime, enjoy photos taken of me rock climbing with my good friends SC and KJ.

Twenty-three Things

It was a glorious birthday weekend. I rock climbed and made primal-friendly brownies. I had a 1920s/Prohibition themed birthday party with mead making, classy friends, and laughter. I walked around with Daddy-O after a light lunch and returned with a Belgian waffle maker in tow. And now, with primal eating and my body in a love-not love relationship at the moment, I am taking it easy by writing this post, my birthday spirit still intact.


On Friday the 16th I turned twenty-three. I’ve heard people give up on the birthday magic after a certain age (most notably in the U.S., becoming legal to drink alcohol on your twenty-first), but not me. Turning twenty-three was awesome, because I feel my age in the most positive of aspects. I may not know what life has in store for me this year, but I have learned a lot thus far.
  1. Living safely is not the same as living smartly.
  2. I stopped aiming for perfection, and started living for progression.
  3. Community is not only something you find; it’s something you make.
  4. It’s okay to not be everything at once, and it’s okay to not be everything at once at twenty-three.
  5. It is never too late to learn something, and it is never too late to start something new.
  6. When asked “What is the point of life?”, this was my response: “I think there really is no one single answer to this question. My meaning is not your meaning, and your meaning isn't mine. Some people spend their entire lives looking for it, while others run into it one random November day. It may take seconds, minutes, days, weeks, months, years, decades, and lifetimes to figure it out, but you won't know unless you put yourself out there for the Universe to show you what it offers. Sometimes dreams and goals take time, even grunt work and sh*t work that you may not like. Ask yourself ‘Is it worth it?’ for each and every dream and goal you have. If the answer is ‘no’, then move on to something that is.”
  7. Observe without judgment; behind every action is a need.
  8. There is no such thing as one perfect body, fitness regimen, or dietary lifestyle. (More on the this after Thanksgiving.)
  9. The language your body speaks to you with is possibly one of the hardest and easiest languages you could learn.
  10. How do you start to become great at something? By deciding you’re great at it.
  11. When in doubt, make belief.
  12.  I’m like a chess piece playing the best game I can with the squares I have accessible to the rules of the board.
  13. You don’t have to be “on” all the time to be productive.
  14. Being genuine has gotten me further than being nice.
  15. I strive for community service that is for more than just humanity.
  16. My progress is my progress, and it is still progression regardless of the time it takes.
  17. Bettering yourself (looks, diet, fitness, education, work, life, etc…) just to prove to someone else what your are worth will never give you the satisfaction you think you’ll get from it.
  18. If you treat your body like it’s something to control and fix, it will always be in constant rebellion.
  19. Comparing myself to others is a disservice to both parties.
  20. I am not my condition.
  21. Living in optimism does not mean living with unrealistic expectations.
  22. What climbing and yoga have taught me is to reach even with the fear of falling, to be flexible and self-aware, to breathe with purpose, to accept the not-today’s and celebrate the little wins, and to always keep trying.
  23. Life is the biggest science experiment there is.


Primal Birthday Brownies (inspired by this recipe)

180 g Coconut oil, solid and at room temperature
125 g Cocoa powder
240 ml Whole milk
100 g Honey
3 Large eggs
240 g Almond meal
1/2 tsp. Sea salt
1/2 tsp. Bourbon vanilla extract

Preheat the oven to 325°F.
Place the coconut oil and cocoa powder in a bowl and mix well.
Add the coconut milk, honey, eggs, almond meal, and spices and blend until combined.
Pour the brownie mixture into a greased 8x8” pan* and smooth the surface of the mixture.
Bake for 30 minutes, then remove and allow it to cool before cutting into individual servings.

Makes 20 servings.

*I was able to make two batches with this recipe, though I do believe the thicker the brownie layer, the gooier and less cake-like it will be.

Updates, News, and Cool New Features

If you told me in April of last year how much Meals of Morri would grow, I would have been wide-eyed and incredulous. I look back at my old posts fondly and see so many wonderful things: how my photos have improved (although I am still learning); how my understanding of hypothyroidism has broadened; how rock climbing and yoga have changed my life; and finally, how my recipes have been seen all over the world.

It’s amazing and mind boggling and absolutely fantastic.

There are a couple of things I want my readers to be aware of in the next few weeks/months that I’m particularly excited about:
  1. Why my Fitness Page is m.i.a. (coming soon!): It is currently being updated to look a lot like my Health & Hypothyroidism page. I wasn’t really happy about my fitness log idea, because I would get so down on myself for not doing it exactly as I’d written. So what’s going in place of it, you’re asking? Rock climbing, yoga, and other fantastic activities I fall in love with along the way.
  2. A FAQ page (coming soon!): This is going to be your go-to page for any questions you may have in regards to my recipes, cookbook and product reviews, my blog, my health, and my photography. And if you find I don’t have an answer to a particular question, feel free to write me an email.
  3. Post variety: Besides recipes, I plan on doing more product reviews, video posts, organic gardening, foodie adventures, discussing what I find concerning thyroid function, fitness fun (how-to’s, places, and helpful hints), and non-recipe recipes (i.e., hair care, skin care, gluten free arts and crafts, etc.).

In the meantime, you can enjoy…
  1. Meals With Morri has a Facebook page: Yes! Finally, a place where you can be notified of recent posts, ask questions (and answer them), provide solid feedback for when I’m stumped on recipes, or write about what recipes you want to see on the site.
  2. Drinks, Smoothies, and Shakes: Remember when I said to enjoy those muffins while I was buying Vega One in bulk? Well, I meant it and it is due this week. As I fall more in love with rock climbing and yoga (that, and the hot summer months are just around the corner), I want to make sure that people remain hydrated with nutrient-dense drinks.

In fact, here is a smoothie recipe to get you started. It’s a green smoothie… with kombucha.

Ah, kombucha… a most refreshing fermented delight. What? You’ve never heard of kombucha? Well, let me enlighten you: it’s fermented tea. Pure and simple.

Some people may roll their eyes at my love for this stuff, because it’s become this “trend” in the alternative health world. But it has been around for a lot longer than hippies and New Age dippies. From the Qin Dynasty (221 – 206 BCE) in China who referred it as “a beverage with magical powers enabling people to live forever” to 19th century Russia’s “tea mushroom” (чайный гриб) and “tea kvass” (чайный квас), it is said to aid digestion and promote other awesome things for your overall well-being. I personally just love the stuff, and have two cultures on the kitchen counter living and fermenting green and black teas as we speak.


But until I can drink my own, I treat myself to a bottle of GT’s Kombucha. I’ve tried many of the flavors, and like every single one I’ve had. The one I have the most often, however, is the multi-green. I enjoy the “green” taste of it, and it is a perfect base for a green smoothie.  

Greener than Green Kombucha Smoothie

240 - 350 ml Kombucha* (I used G.T.’s multi-green)
1 Frozen banana
85 g Frozen spinach
1/4 Avocado

Place the ingredients in the blender and blend until thoroughly combined.
Pour in a large glass and serve cold.

Makes 1 serving.
